In this clip, Kevin Bludso discloses some of his secret recipes. He first talks about his tomato-based BBQ sauce, which won a cookoff in Tennessee. Kevin also reveals his unique mac and cheese recipe, which has four to six different cheeses, including Parmesan, sharp cheddar, mad cheddar, Colby Jack, and mozzarella, and is cooked in chicken broth. When asked about the unique combination of cheese used in the recipe, Kevin attributes it to the cooking style of his mother and grandmother. Moving on to Bludso's BBQ's meat recipes, Kevin explains the method of seasoning their brisket and ribs with simple ingredients like salt, pepper, and a special rub for the ribs made from brown sugar, garlic, and celery, among other components. Their secret to flavorful meat includes spraying apple juice on the pork and beef broth on the beef while cooking. They also have their unique take on Mexican street chicken. Kevin discusses how they incorporate LA culture into their BBQ by grilling and smoking the chicken for an extended period, which is a new approach compared to the traditional quick grilling technique.
