Kevin Bludso from Bludso's BBQ shared his process of preparing the perfect brisket. Simply seasoned with garlic, salt, and pepper, Bludso cooks the meat 'low and slow' using post-oak to achieve the authentic Texan BBQ flavor. He added that the meat is left to smoke for hours before it's wrapped in butcher paper (opted over foil to maintain the juices) and rested until tender. Vlad and Bludso then moved to the cutting board, where Bludso demonstrated the desired color and 'jiggle' of a well-smoked brisket. He also provided a taste test of his delicious brisket, noting that the flavor should be a perfect mix of smoke, seasoning, and meat. Bludso finally stressed the essential bend in a perfect brisket; it should not fall apart but rather be tender and flavorful.
