Bludso BBQ's Kevin Bludso shares how he brings a unique Los Angeles twist to his barbecue style. Inspired by Mexican street chicken, Bludso uses a similar seasoning and smokes the chicken instead of grilling it, enhancing the flavor through a two-and-a-half to three-hour smoke process. He mentions his BBQ jumbo wings, which are marinated, smoked, and then fried, gaining significant popularity in L.A. After leaving the Department of Corrections, Bludso used his settlement money to buy his first smoker and eventually started his own BBQ business. Offering dishes like "pollo asada" smoked chicken, his style continues to be a fusion of Mexican and traditional BBQ culture. Bludso's signature "Pitmasters punch," a vodka and pineapple drink, reflects this fusion. He describes his BBQ as encompassing everything from Mexican cuisine to L.A and Compton culture.
