He also mentioned that he particularly enjoys food with a bit of heat, including dishes such as spicy sausages dipped in hot sauce. Kevin Bludso also shared their thoughts on a variety of ribs, including Texas, Kansas City, and Memphis ribs, and stated that the key difference between these ribs is often the sauce used or the words to describe them. However, he emphasized the importance of not cooking ribs with sauce on, as it can burn and ruin the flavor. Kevin Bludso said that what some people mistake as burned is actually just the sugar that forms the crust, which holds a lot of the flavor.
